The toona sinensis (or Chinese toon) in rich nutrition, with unique aroma and broad prospects for use. However, the is prone to respiration after being harvested. As a heat-sensitive vegetable, it easy lose water decay. This paper introduced latest research progress on physical preservation of before during storage, providing references developing new technologies keeping toon fresh.
